Here we go again, it is Monday, and the #StayAtHome Orders to Fight COVID-19 in the United States are in full swing. You might be home more now but some of you have suddenly become your children’s teacher. Oh MY! I homeschooled my kids for 20 years so believe me I understand you need meals like my MAKE ONCE SERVE TWICE SPICED LAMB! Just tell your kids this lamb is “just like taco meat” and let them hunt for the tomatoes to make the brown rice and spinach dish FuN. When it comes to serving the spiced lamb in the hand pies…rest assure they will simply love this vessel for delivering healthy veggies and lamb.

As you have avoided grocery stores, has your freezer been your foodie hero or your pantry? For me, I am a freezer girl! Back in the old days, when I freely roamed Vons, Aldi’s, and Costco’s grocery aisles unmasked, I bought a healthy stash of Aussie Beef and Lamb on sale or clearance. What I originally planned for the specific cuts of meat has changed! AND I am thankful, yes, I said that ~ThanKfulL! Desperate times make us think in new ways! Over the past few weeks, we have needed to click on the creative cooking button and prepare unique combinations.

WOW…just wow…my new #coronacooking adventure has proven that different cuts of Aussie Beef and Lamb are versatile! I would never have thought of taking an Aussie butterflied leg of lamb and mince it in my food processor to get a gorgeous chunky ground lamb. I love this technique now…super flavorful and tender. The minced lamb can be used in any of your ground pork or beef dishes. A 3-pound lamb roast, minced, and seasoned can make two totally different dinners! Family-Style Aussie Spiced Lamb on Instant Pot Brown Rice Pilaf

INGREDIENTS (will make 2 family dinners)

For Spiced Lamb:

1 (3-pound) Aussie Butterflied Leg of Lamb, minced in food processor

1 tablespoon cooking oil, canola, olive, coconut, or grapeseed

1 large chopped onion, yellow or white

1 tablespoon ground coriander

1 tablespoon ground cumin

1 tablespoon garam masala (optional)

1/2 tablespoon granulated garlic

1/2 tablespoon mild chili powder

1/2 tablespoon smoked paprika powder (optional)

1/2 tablespoon turmeric (optional)

1 teaspoon kosher salt

1 (15 ounce) can fire roasted diced tomatoes

1 (4 oz) can diced green chilies, drain and reserve juice, as instructed

1 tablespoon apple vinegar, white vinegar, or lime juice

For Perfect Instant Pot Rice & Spinach Pilaf: 1 1/2 cup uncooked brown rice, rinsed 2 cups cold water

1/2 tablespoon cooking oil or butter

1/2 teaspoon granulated garlic

1/2 tablespoon lime or lemon juice

1 teaspoon salt, or desired amount

2 cup frozen spinach, thawed or 8 cups steamed fresh spinach

METHOD

Tip: Make Brown Rice Pilaf first

For The Spiced Lamb: Cut leg of lamb into chunks. Sprinkle all spices and salt over lamb chunks. In batches, place lamb chunks into food processor bowl and pulse until diced. Alternative: Dice by hand.

In a large skillet, on medium-high, heat cooking oil. Add onions and cook, stirring often, 4 minutes.

Add seasoned lamb, and cook on medium-high, stirring often, 4-5 minutes.

Add tomatoes and green chilies, and simmer, 5 minutes. Stir in vinegar or lime juice. Adjust seasoning with salt and black pepper. Divide spiced lamb into two equal portions. Reserve half of the spiced lamb for hand pies or an alternative healthy side-dish (see options above).

For Perfect Brown Rice Spinach Pilaf: Place brown rice, water, cooking oil, and granulated garlic into Instant Pot. Secure lid on Instant Pot. Adjust Venting Knob to the Sealing Position. Cook on High Pressure for 15 minutes then Natural Release for 5 minutes. Turn Venting Knob to Vent position. Once the steam has completely released, and open lid carefully and stir in lemon juice, salt, and spinach. Adjust seasoning.

Serve: Fluff brown rice onto a serving platter. Top with half of the Spiced Lamb. Sprinkle with freshly chopped parsley.

Servings: 4-6
