Chipotle Garlic Chicken on Baby Swiss Chard

Hey friends, this Chipotle Garlic Seasoning produced by Spiceology, and created by Derek Wolf made for a very delicious quick chicken dinner!

All I did was rub the skin under and over the chicken breast skin. I flipped the chicken over and rub the seasoning on the bottom side. Plop on a foil lined rimmed cookie sheet. I topped the skin with 5 chopped garlic cloves and red bell pepper slices.

Once the oven reached 350°F the chicken went in and baked for 25-30 minutes. Once the chicken reached 160°F I flipped the broiler on HIGH and broiled for 5 minutes. Let the chicken rest then slice!

The salad is baby Swiss chard and spinach mixed with feta, raspberries and a citrus vinaigrette. I really enjoyed the boldness of the Chipotle Garlic Chicken with the contrasting tartness of the salad. Please forgive me for the very casual recipe...but heck it is that simple!!! Enjoy!
