Holiday Cran-Apple Big Mountain Breakfast Crumble

Holiday Cran-Apple Big Mountain Breakfast Crumble with Cashew Yogurt and Spiced Oatmeal! The “Holiday Season” may be over but this bright and healthy breakfast parfait can be enjoyed any season!


Have you heard about Big Mountain Foods Mushroom Crumbles? I really enjoyed the umami flavor; a great stand in for meat sausages. And did I say, Lion’s Mane Mushroom Crumble is #Vegan!?!


My Vegan Breakfast Crumble has layers of spiced oatmeal, cashew yogurt, and tastes like Sausage Mushroom Crumble. To add freshness, cranberries and apples take a whirl in a mini-food processor with orange zest, orange juice, fresh basil and mint. #OhYum!

Holiday Cran-Apple Big Mountain Breakfast Crumble with Cashew Yogurt and Spiced Oatmeal

Serves: 4


Ingredients:

1 pkg Big Mountain Foods Lion Mane’s Mushroom Crumble

1 cup uncooked rolled oats

1 teaspoon pumpkin pie spice

1/2 teaspoon ground ginger

1/8 teaspoon salt

1/8 teaspoon ground clove

1 tablespoon pure maple syrup or agave or sweetener of choice

3/4 fresh or frozen cranberries

1 large peeled and chopped crisp apple

1 orange, zest and juiced

2 tablespoons chopped basil

2 tablespoons chopped mint

3/4 cup cashew yogurt

Garnish: Mint leaves


Instructions:

Coat a large skillet with vegetable spray or cooking oil. Add Big Mountain Foods Lion’s Mane Mushroom Crumbles, and sauté over medium heat, stirring frequently, for 5 minutes. Set aside.


Meanwhile, bring 3/4 cup water to a boil in a medium pan. Add oats, spices, and salt, and cook for 5 minutes or as indicated on package directions. Remove from heat, stir in maple syrup, cover with a lid and set aside until ready to serve.


In a mini-food processor, combine cranberries, apples, zest from one orange, 2 tablespoon orange juice. Process to finely chop. Stir in basil and mint, and add your favorite sweetener to taste.


Divide spiced oatmeal into parfait dishes or bowl of choice. Layer with cashew yogurt (3 tablespoons per bowl), Mushroom Crumble, and Cran-Apple relish. Garnish with mint leaves.


Note:

Holiday Cran-Apple Big Mountain Breakfast Crumble with Cashew Yogurt and Spiced Oatmeal can be served in mason jars, and gains flavor as it sits overnight.

A convenient grab-go vegan breakfast for people on the go.
