In this Covid-19 world there are some POSITIVES that are good! It is so beneficial that many of us are choosing to cook at home more than we ever had. Sure we miss being a support to our community by frequently dining at restaurants…BuT…it is POSITIVE that we are learning to cook restaurant quality dishes at home.
It is POSITIVE that we are exploring unique ingredients because our “normals” are not on the shelf.
We have heard of heartwarming POSITIVE stories in the midst of all being physically separated!
It was a POSITIVE move when craving Asian takeout I made my own amazingly delicious Asian Aussie Lamb! I went to Aldi’s, with a mask on, and the only meat left in the refrigerated meat bin was seasoned butterflied leg of lamb, I thought HECK why not make Teriyaki Lamb. AND HeY, the Docs are saying eat healthy so I thought why not try some Cauliflower Rice….cuz….ummm …there was not white rice on the shelf. I know, you get the picture….we are forced to make dishes we have not! to tell you the truth #iLoveTheChallenge! So here goes, the most delicious Teriyaki Aussie Lamb and Broccoli over Cauliflower Rice.

Teriyaki Aussie Lamb and Broccoli over Cauliflower Rice
INGREDIENTS
Teriyaki Lamb and Broccoli:
1 1/2 pounds seasoned or unseasoned butterflied or boneless Aussie Leg of Aussie lamb chops
1 1/3 cup prepared teriyaki sauce, divided
2 - 3 cups fresh broccoli florets or 2 cups available fresh or frozen vegetables
1 tablespoon cooking oil (olive, canola, vegetable, grapeseed)
2 tablespoons cornstarch
Cauliflower Rice:
1 cauliflower or 2 (10 ounce) bags frozen or 1 commercial produce raw cauliflower rice
1 tablespoon cooking oil (olive, canola, vegetable, grapeseed)
1/4 cup chopped green onions
1/4 cup chopped celery
2 teaspoons grated fresh ginger or 1/2 teaspoon dried ginger
1/4 cup chopped cilantro or parsley or add 1/2 tablespoon of dried herbs
2 teaspoons lemon zest, optional
METHOD
Prepare Lamb: Cut lamb into 2-inch pieces, trimming excess fat and tendons. Marinade lamb in 1 cup of teriyaki sauce while cauliflower rice is being prepared or up until 2 hours.
Prepare Whole Cauliflower: Remove leaves and core and cut into 2-inch chunks. Place half of the pieces in food processor and pulse about 5 times or until cauliflower resembles rice. Repeat until all cauliflower is riced. Note: if using commercial cauliflower rice follow instructions for homemade cut cauliflower rice. If using frozen cauliflower rice follow the directions on package.
Cook Cauliflower Rice: In a large skillet, heat cooking oil over medium high heat. Add green onions and celery and cook for 1 minute. Grate ginger into cauliflower rice and sprinkle with 1/2 teaspoon salt, cook for 3 to 5 minutes. Remove from and stir in cilantro and lemon zest; set aside.
Cook Broccoli: Place broccoli in a micro-wave safe dish with 1/2 cup water, cover, and cook in the microwave, on high for 3 minutes. Uncover and drain; set aside.
Cook Teriyaki Lamb: Remove and drain lamb from teriyaki, toss in cornstarch. Heat the oil in a large, large skillet or wok and cook on each side for 2-3 minutes or until lightly brown. Stir in cookies broccoli and remaining 1/3 teriyaki and cook on low for 1 minute to heat. Squeeze lemon juice from 1/2 lemon over teriyaki lamb. Garnish with desired herbs. Serve over cauliflower rice.
To make you own Teriyaki Sauce:
2 cloves garlic
1 teaspoon ginger minced
3 tablespoons brown sugar
Slurry
2 tablespoons cold water
2 tablespoons cornstarch
Combine 1/3 cup soy sauce, 1/2 cup water, 1/2 cup orange or pineapple juice, 2 teaspoons grated garlic, 1 teaspoon grated ginger, and 3 tablespoons brown sugar in a small saucepan. Bring to a boil and simmer for 2 minutes or until the brown sugar dissolves. Whisk 2 tablespoons 2 tablespoons cornstarch until cornstarch dissolves. Pour the cornstarch slurry into the boiling sauce a little at a time until desired consistency. Makes about 1 1/3 cup teriyaki sauce.
