Cedar Bay Salmon Flatbread with Fresh Mozzarella, Bacon, Blueberries, and Basil
Description: A crispy flatbread brushed with garlic olive oil, a tangy spread of whole-grain mustard, melted mozzarella, crispy bacon, and the bright pop of pickled onions. Now wait, there’s more! Topped that with flaky, tender pieces of smoky-delish Cedar Bay salmon, sweet bursts of fresh blueberries, and fresh basil. A creative combo of flavors and textures that will send your team to the championships!
Serves: 4 Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes
Ingredients:
1 (8 oz) package Cedar Bay Cedar Planked Atlantic Salmon (Applewood with Orange & Ginger)
1 flatbread (approximately 6 inches by 9 inches)
2 tablespoons garlic-infused olive oil
2 tablespoons whole-grain mustard
8 ounces fresh mozzarella, sliced
4 slices cooked bacon, cut into 1-inch pieces (pre-cooked bacon works well)
⅓ cup chopped pickled onions (homemade or store-bought)
1 cup fresh blueberries
½ cup fresh basil leaves, whole or chiffonade (thinly sliced)
Instructions:
Thaw the Salmon: Thaw the Cedar Planked Atlantic Salmon overnight in the refrigerator or in a cold-water bath for approximately 40 minutes before cooking.
Cook the Salmon:
Oven Method: Preheat oven to 425°F (220°C). Line a baking sheet with foil to catch any drippings and place it on the bottom rack of the oven. Position the cedar plank with the salmon directly on the center oven rack above the baking sheet.
Grill Method: Place the salmon on the plank over indirect high heat on a grill. Cook for 10–15 minutes, or until the internal temperature reaches 140°F (60°C) and the salmon flakes easily. Let the salmon rest until the flatbread is ready. Then, use two forks to flake it into bite-size pieces
Prepare the Flatbread: Preheat grill or oven to 425°F (220°C). Brush both sides of the flatbread with garlic-infused olive oil. Place the flatbread directly on the hot grill grate or oven bottom rack (bottom side down) and cook for 4–6 minutes per side, or until lightly crispy on the bottom. Transfer the flatbread to a baking sheet and spread evenly with whole-grain mustard. Top with mozzarella cheese, bacon pieces, and pickled onions.
Bake/Grill the Flatbread: Grill the flatbread with the grill lid closed or bake in the preheated oven for 8–10 minutes, or until the cheese is melted and bubbly.
Assemble the Flatbread: Evenly distribute the flaked salmon over the flatbread. Top with fresh blueberries and basil leaves. Slice into 4 piece, and serve warm
Tips:
For a visually appealing presentation, toss the blueberries with a small amount of lemon olive oil or regular olive oil.
To save time, use pre-cooked bacon and store-bought pickled onions.
