I am honored to be one of the 15  bloggers invited to compete in the Cedar Bay Grilling Company’s Bloggers Recipe Challenge. I tried out two of their Cedar Bay Planked Atlantic Salmon products. Easily found in the seafood freezer section, at my local grocery store, I couldn’t decide which sounded yummier so I bought both. The Applewood with Orange and Ginger is a tasty combination of flavors, and Hickory Maple has that sweet-hickory balanced flavor that is equally delicious. I really can’t pick a favorite! How to Make Salmon Stuffed Eggs

Cedar Bay Salmon Stuffed Eggs take the classic deviled egg to a whole new level by incorporating the incredible flavor of Cedar Bay Salmon in two ways. Here's how you make them:


  1. Start with the Star: Cook your Cedar Bay Salmon according to the package directions (either in the oven or on the grill). The aroma alone is enough to get your mouth watering! Once cooked, let it rest and then flake it into bite-sized pieces.

  2. Egg-cellent Foundation: Hard-boil some eggs (my go-to method is bringing them to a rolling boil, then removing from heat and letting them sit for 13 minutes). After a quick ice bath, peel and cut into halves, lengthwise, of course. Carefully scoop out the yolks and place them into a bowl.

  3. Flavor Fusion: In a bowl, combine the yolks with sour cream, mascarpone cheese (for extra creaminess!), mayonnaise, apple cider vinegar, lemon juice, salt, pepper, and a portion of that delicious flaked salmon. Blend it all together until smooth and creamy. The salmon adds just a hint of sweetness to the filling. So good!

  4. Assemble and Adorn: Spoon or pipe the salmon-infused yolk mixture back into the egg whites. Top each egg with more flaked salmon, a thin slice of cucumber for a fresh crunch, and a sprinkle of chives or green onions for a pop of color and flavor.

RECIPE

Game Day Salmon Stuffed Eggs



Servings: 18 stuffed eggs Prep Time: 25 mins Cook Time: 25 mins Total Time: 50 minutes


What You’ll Need:

  • 1 (8oz) package Cedar Bay Cedar Planked Atlantic Salmon (Applewood with Orange & Ginger)

  • 8 large eggs

  • 1/3 cup sour cream

  • 1/4 cup mascarpone cheese, at room temperature

  • 2 tablespoons mayonnaise

  • 1/2 tablespoon apple cider vinegar

  • 1/2 tablespoon whole grain mustard

  • 1 teaspoon classic mustard

  • 1 teaspoon kosher salt

  • 1/2 teaspoon freshly ground black pepper

  • 3 Persian cucumbers, thinly sliced

  • 1/4 cup fresh dill, fennel fronds, or other fresh herb of choice for garnish

  • 2 tablespoons minced chives or green onions

Preparation Instructions:

  1. Thaw the Salmon: Thaw the Cedar Planked Atlantic Salmon overnight in the refrigerator or in a cold water bath for about 40 minutes before cooking.


  1. Cook the Salmon:

  2. Oven Method: Preheat oven to 425°F (220°C). Line a baking sheet with foil to catch drips and place it on the bottom rack. Place the cedar plank with the salmon directly on the center oven rack above the baking sheet.

  3. Grill Method: Place the salmon on the plank over indirect high heat on the grill.

  4. Cook for 10-15 minutes, or until the internal temperature reaches 140°F (60°C) and the salmon flakes easily. Let the salmon rest until ready to use. Flake the salmon into bite-size pieces using two forks.


  1. Cook the Eggs: Place the eggs in a pot large enough to hold them in a single layer. Cover the eggs with cold water, about 1 inch above them. Bring to a full rolling boil over high heat, then immediately remove from heat, cover the pot, and let the eggs stand in the hot water for 13 minutes. Drain the eggs and immediately transfer them to a bowl of ice water for 10 minutes to stop the cooking process.


  1. Prepare the Eggs: Peel the eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a medium bowl. Arrange the egg whites on a serving platter.


  1. Prepare the Filling: Add to the egg yolks the sour cream, mascarpone cheese, mayonnaise, apple cider vinegar, whole grain mustard, classic mustard, salt, pepper,  and 1/3 cup of the flaked cooked salmon. Use an immersion blender, food processor, or stand mixer to blend the mixture until smooth and creamy. Note: The filling can be mixed with just a fork, it just won’t turn out quite as smooth which is okay.


  1. Fill and Garnish: Spoon or pipe about 1 1/2 tablespoons of the salmon-egg yolk filling into each egg white. Top each filled egg with some of the remaining flaked salmon. Place a thin cucumber slice next to the salmon flakes. Sprinkle with minced chives or green onions and a pinch of salt. Refrigerate until ready to serve.

Tips:

  • For a time-saving shortcut, use store-bought hard-cooked eggs.

  • Plain Greek yogurt can be substituted for sour cream.

  • Store leftover Salmon Stuffed Eggs covered in the refrigerator for up to 2 days.
