Grilled Chinese BBQ spiced rubbed Halibut sinks into a combo of Sweet Chili Sauce peppers, cherry tomatoes, tomatillo and scallions. Top off these mini tostadas with chili spiked avocado sour cream for a delicious guacamole! Simply delicious!

Serious Foodie Vietnamese Sweet Chili Hot Sauce
Have you had Vietnamese sweet chili hot sauce from the grocery store? I have too but never I prefer Serious Foodie Vietnamese Sweet Chili Hot Sauce! Why you may ask? The ingredients, flavor, and texture, is my answer! The Sweet Chili Hot Sauce from the market has modified starch in it while Serious Foodie uses pectin. Serious Foodie’s sweet chili hot sauce had balanced the vinegar, water, sugar and Fresno chilies to perfection. I also appreciate the notes of garlic, fish sauce, and salt.
Serious Foodie Vietnamese Sweet Chili Hot Sauce is gluten-free, and focuses on the flavors of our proprietary fresh chilies; sweet and garlic-y! I added the chili sauce to sweet peppers, tomatillo before adding the lightly fried halibut. My deliciousness; the sweet chili veggie medley with halibut could stand as a dish without the taco increments. I will definitely make it again!

Ingredients:
For Chines BBQ Spiced Halibut Tostadas:
2-3 tablespoons Serious Foodie Chinese BBQ Spice Rub
12-16 ounces 1-inch or more thick halibut, cut into 2-inch wide steaks
1 tablespoon avocado oil, or preferred cooking oil
8-12 fried corn tortilla shells for tostadas
For Sweet Chili Chunky Salsa:
1/2 tablespoon preferred cooking oil
3 oz (1/2 jar) Serious Foodie Vietnamese Sweet Chili Hot Sauce
1 cup cut multi-colored cherry tomatoes
1 cup sliced multi-colored mini peppers
1 1/2 cup cut tomatillos
1 cut lime or lemon
For Spiked Creamy Guacamole:
1 tablespoon cup Vietnamese Sweet Chili Hot Sauce, more if you wish
1 cup roughly mashed avocado
1/2 cup sour cream
Pinch of salt
For Toppings:
2 cups shredded romaine lettuce
Lime or lemon slices
Chopped cilantro
Instructions:
To make Chinese BBQ Spiced Halibut Tostadas: Generously rub Serious Foodie Chinese BBQ Spice Rub on both sides of halibut. Drizzle with avocado oil. Set aside.
Fry corn tortilla shells for tostadas if prepared tostada shells are not being used.
In a skillet or grill pan, over medium high heat, cook the seasoned halibut for 4 minutes on each side, or until the center is white and opaque. Tip: If the fish has browned but does not flake easily, continue to cook on low for a few minutes, turning the fish over every minute. Meanwhile, prepare the warm sweet chili chunky salsa.
To make Sweet Chili Chunky Salsa: In a skillet, over medium heat, drizzle 1/2 tablespoon cooking oil. Add Serious Foodie Sweet Chili Hot Sauce, tomatoes, peppers, tomatillos, and scallions. Sauté 2 minutes, stirring frequently, or until chunky salsa is slightly softened. Add a pinch of salt or to taste.
Transfer cooked halibut to skillet and wedge the filets into the tomato mixture. Squeeze lime over fish and chunky sauce. Keep warm. Right before serving, break fish into chunks, and lightly spoon chunky salsa over the halibut.
To make Spiked Creamy Guacamole: Combine Vietnamese Sweet Chili Hot Sauce, avocado, sour cream, and salt into a mini food processor bowl or bowl for immersion blender, and blend until smooth. Transfer to a small serving bowl and sprinkle with Serious Foodie Chinese BBQ Spice Rub and cilantro.
To serve: Spoon Sweet Chili Chunky Salsa with Chinese BBQ Halibut onto a crispy corn tortilla. Top with shredded lettuce and chopped cilantro. Spoon on Spiked Creamy Guacamole and serve with lime or lemon wedges. Serve with extra Vietnamese Sweet Chili Hot Sauce and Creamy Guacamole.
