I Was Surprised I Loved Italian Meatball Pot Pie so Much!

Here’s the deal….meatballs aren’t my favorite dish nor does pizza or pot pie call my name! However, Italian Meatball Pot Pie sounded like a great dish for the Don Pepino’s Blogger Recipe Challenge. After all, it had a catchy name and a sense of culinary adventure. The first time I made the meatball pie magic happened! The pizza sauce smothering the homemade Italian sausage and beef meatballs along with the lemon basil ricotta won my palate. This dish is crave-able! I ate it for lunch and dinner the first day and wanted it for breakfast the second day. It is such a satisfying dish and has a deep balanced flavor. I truly hope you try Don Pepino’s Italian Meatball Pot Pie!

Make It Like a Pro: Meatball Pot Pie Tips

  1. To prevent the crust from becoming soggy from the sauce and and meat and vegetable juices, later the bottom with sliced mozzarella or gouda cheese before adding the filling. The cheese acts as a moisture barrier and melts into a decadent foundation.


  2. Time Saver: I tried pout prepared uncooked meatballs found in a grocery store's meat section, and I must admit they were good. Just don't get frozen meatballs or prepared cooked meatballs. Freshness counts here.


  3. Roll the Italian meatballs (50/50 ground beef and sweet Italian sausage) to the size of a gold ball. I used my 2-inch cookie scoop. Seat the meatballs in a skillet, with a dash of oil for a deep brown crust. Don't overcook! The meatballs can still be pink inside as they finish cooking in the pie.


  4. Get spicy by adding red pepper flakes or using Hot Italian Sausage. I love to add green olives when my twins aren't home.


  5. Get cheesy by adding grated mozzarella. However, the lemon basil ricotta brings such a nice creaminess the Meatball Pot Pie did not need extra cheese in my opion.


  6. For the very best Italiabn Meatball Pie, I highly suggest making your own crust (I have a great recipe if you need it.) I was in a hurry so I grabbed a frozen pie crust from my freezer. Unfortunatel,y it was a dried out and so I couldn't roll it 2-inch bigger than my pie pan. Thus, the pot pie isn't as gorgeous as it could be.

Prep & Cook Info

Ingredients
For the Crust & Topping:
  • 2 pie crusts (refrigerated store-bought or homemade)

  • 6 mozzarella sandwich cheese slices

  • 1 egg yolk whisked with 1 tablespoon water (egg wash)

  • 1/4 cup freshly grated Parmesan cheese

  • Small fresh basil leaves (for garnish)


For the Lemon-Basil Ricotta:
  • 2/3 cup whole-milk ricotta cheese

  • 1 egg yolk

  • 1/4 cup freshly grated Parmesan cheese

  • 1 tablespoon minced fresh basil

  • 1/2 teaspoon fresh lemon zest, plus lemon juice for the filling

  • Pinch of salt and freshly cracked black pepper


For the Meatballs:
  • 3/4 cup panko bread crumbs

  • 2 tablespoons milk

  • 1 large egg

  • 1 tablespoon minced fresh parsley

  • 1 tablespoon minced fresh basil

  • 1 teaspoon Italian seasoning

  • 1 teaspoon granulated garlic

  • 1 teaspoon sea salt

  • 16 oz ground beef (80/20 or 90/10 Angus Beef)

  • 8 oz ground mild Italian sausage


For the Filling:
  • 1 tablespoon extra virgin olive oil

  • 2 tablespoons unsalted butter

  • 1/2 cup chopped yellow onion

  • 1 cup chopped red and/or green sweet pepper

  • 1/2 cup chopped celery

  • 1/4 cup chopped green or black olives

  • 1 can (14.5 oz) Don Pepino Pizza Sauce

  • Season with salt and pepper, and a squeeze of lemon juice, if needed.

Instructions
1. Prepare the Pie Crust

Preheat your oven to 400°F. Line a 9-inch deep-dish pie pan with the bottom pie crust. Arrange the 6 slices of mozzarella sandwich cheese in an even layer across the bottom of the crust.


2. Mix the Ricotta

In a small bowl, stir together the 1 cup ricotta cheese, egg yolk, Parmesan cheese, minced fresh basil, lemon zest, salt, and pepper until smooth. Set aside.


3. Form the Meatballs

In a large bowl, combine the panko bread crumbs, milk, egg, fresh parsley, fresh basil, Italian seasoning, granulated garlic, and sea salt. Mix with a spoon until combined. Add the ground beef and ground Italian sausage, gently combining using your hands. Roll the mixture into small meatballs (a 2-tablespoon cookie dough scoop works great for this step).


4. Brown Meatballs & Layer

Heat a large skillet over medium-high heat. Brown the meatballs in batches, turning occasionally for 6–8 minutes until golden brown on all sides (they do not need to be cooked through completely). Transfer the meatballs to a plate to cool slightly.


5. Make the Filling

In the same skillet over medium heat, melt the butter with the olive oil. Add the chopped yellow onion, sweet peppers, and celery. Cook, stirring frequently, for 5 minutes until tender. Stir in the chopped olives and Don Pepino Pizza Sauce. Taste and season with extra salt and black pepper. Stir in 2 teaspoons of lemon juicce. then stir in the meatballs. Pour the meatballs into the bottom cheese-lined pie crust then evenly arrange them. Drop small spoonfuls of the seasoned ricotta mixture into the spaces between the meatballs.


6. Assemble & Bake

Cut the remaining top pie crust into strips and weave them over the top of the pie to form a lattice crust. Crimp the edges of the top and bottom dough together. Brush the lattice crust with the egg wash. Bake at 400°F for 45 minutes, or until the crust is deep golden brown and the filling is bubbling. (Note: If the top crust begins to brown too quickly, tent loosely with aluminum foil).


7. Finish & Serve

Remove from the oven and immediately sprinkle the top with the freshly grated Parmesan cheese and small fresh basil leaves. Allow the pot pie to rest for 10 minutes before slicing and serving.
