Chef’s Tips & Tricks for Slider Success
Slice with a Bottom-Heavy Ratio:
When slicing your slab of rolls horizontally, cut slightly higher than the middle line so the bottom half remains nice and thick. A sturdy bottom crust provides a strong base to hold all the heavy meats, cheeses, and peppers without collapsing under the weight.

Create a "Cheese Shield":
Layer your sliced mozzarella sandwich cheese directly onto the bottom roll before adding any vegetables, peppers, or sauce. This meltable cheese layer acts as a waterproof barrier, keeping the juices from the peppers and olives from soaking into the bread so your sliders stay crisp, never soggy.
Speaking of cheese, on a day that I was out of mozzarella cheese slices I used Gouda sandwich size cheese slices and loved the results.

You can assemble the rolls, meats, cheeses, and peppers right on your baking sheet the morning of your event, up to 6 hours in advance. Cover the pan tightly with foil and refrigerate. Hold off on brushing the seasoned butter glaze until right before sliding the tray into the oven.

If you're feeding a crowd that prefers milder heat, simply swap the spicy Fresno peppers, red sweet roasted peppers, or mild banana pepper rings.

Don Pepino’s Hot Italian Sliders

Ingredients
Base & Cheese
1 (12-count) package Savory Hawaiian rolls or slider buns
10 slices (8 oz) mozzarella sandwich slices or Gouda cheese slices
8 slices (8 oz) fresh mozzarella, sliced
Sauce & Meats
1 can (14.5 oz) Don Pepino Pizza Sauce, divided
8 thin slices Black Forest ham
8 slices Calabrese salami
8 slices pepperoni
Peppers & Veggies
1/3 cup green bell peppers, thinly sliced
1/4 cup jarred Fresno peppers, sliced
1/4 cup jarred pepperoncini, sliced
1/4 cup marinated roasted sweet red peppers, chopped
1/4 cup green olives, chopped
Seasoned Butter Topping
2 tbsp salted butter, melted
2 tbsp extra virgin olive oil
2 tbsp toasted dried onion
1 tsp Italian seasoning
1 tsp granulated garlic
1/2 tsp Worcestershire sauce
Instructions
1. Prep the Oven & Pan
Preheat your oven to 350°F (175°C). Line a rimmed baking sheet with foil or parchment paper.
2. Slice & Sauce the Rolls
Slice the entire slab of rolls horizontally, keeping the bottom half slightly thicker than the top. Place the bottom half cut-side up on your prepared baking pan. Lightly spread about half of the Don Pepino Pizza Sauce on the cut side of both the top and bottom layers. Set the top layer aside and reserve the remaining pizza sauce for serving.
3. Layer the Fillings
On the cut side of the bottom layer, assemble the ingredients in order:
Mozzarella sandwich slices (your moisture shield!)
Black Forest ham
Green bell peppers, Fresno peppers, and pepperoncini
Fresh mozzarella slices
Calabrese salami
Roasted sweet red peppers and chopped green olives
Pepperoni
Place the top layer of rolls over the fillings.
Glaze & Bake
In a small bowl, whisk together the melted butter, olive oil, toasted dried onion, Italian seasoning, granulated garlic, and Worcestershire sauce. Generously brush the seasoned butter mixture over the tops of the rolls. Cover the pan loosely with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is fully melted and the tops are beautifully golden brown.
6. Rest & Serve
Let the sliders rest for 5 minutes, then slice into 12 individual sliders. Warm the remaining Don Pepino Pizza Sauce and serve on the side for dipping!
