Fusion Yum: Salsa Verde Chorizo Udon Noodle Soup

Fortune was with me when I received the news that I was invited to participate in JSL Foods Fortune Udon Noodles Soup Blogger Recipe Challenge! You see, I had not tried JSL Foods Udon noodles! Boy was I in for a yummy surprise! One reason I love to enter cooking contests and challenges is the opportunity to experience NeW FooDs! I now see the ease of preparing Fortune Udon Noodles! The TasTy, easy-to-prep noodles have won me over, and I definitely see FORTUNE in my future!
The Contest Challenge: To develop a winter soup that has unexpected fusion-flavors! In other words, a creative, warm, inviting bowl of #UdonYuM!
I’m ready for the challenge! Who doesn’t crave a flavorful hot bowl of noodle soup during the winter? I definitely do! I prepare soup a few times a week for the FAM… and neighbors. I hear that soups are one of my strengths in the kitchen. One comment, just this week from Hubby, “Your soups are consistently the best!” If you are ever in my neck of the woods, stop by and I will whip up a delicious bowl of Fortune Udon Noodle Soup for you! Seriously, I will!
An idea immediately came to mind when I read the Fortune Udon Noodle Soup Challenge… I would develop a cross-cuisine bowl of soup that incorporates my off-the-charts fresh salsa verde and Fortune Udon Noodle Chicken Flavor soup. Easy-Peasy! I could visualize an eye-catching warm Bibim Guksu (Spicy, Sweet and Vinegary Noodle Soup). I began there but when I made the soup and posted an Instagram story my fabulous-fusion udon soup took on the name Salsa Verde Chorizo Udon Noodle Soup! Perfect name as it describes the #YumFactors! My “Udon Noodle Soup” contest entry ~ is absolutely one of my favorite merry soups ever! Seriously! Ever. The “Umami Experience” that happens in this soup is really note-taking. Hubby and I were WoWed. We embarrassingly commented way too many times but we just to rave about the overall balance of the udon soup. I am so eager to make it again soooo "Udon Soup’ party at Merry’s house!
Let’s talk about Fortune Udon Noodles!!! After multiple Instagram story posts on how I made my contest entry, my daughter wrote, “The girls (my GrandGirls ages 9, 7, 6) love Fortune Udon noodles! I brought them home the other day and did a quick udon it was delicious!” I am flying up to see the GrandGirls and my daughter, in March, and I am so eager to make Salsa Verde Chorizo Udon Noodle Soup for them. I will be sure to snap a photo of them slurping down their Fortune Udon Noodles!
NUTRITION: I love that Chef Yaki’s Fortune Noodles are pre-cooked so prep time is so short! My GrandGirls love the plump Udon Noodles, and I can feel good about serving Fortune Udon noodles to my family because there is no MSG, no cholesterol, and they contain added flaxseed to provide 130 mg of ALA Omega-3 per serving! Yipppeee I am sneaking in added nutrition.

Salsa Verde Chorizo Udon Noodle Soup
2 Packages Fortune Udon Noodles Chicken Flavor Packet
4 cups water
1 cup fresh salsa verde, homemade (see recipe below), or prepared refrigerated
12 ounces homemade pork or chicken chorizo, or prepared ground chorizo
1 cup julienne carrots, hand-cut or prepared package
1 cup sugar snap peas
1 cup shredded Savoy cabbage or Napa Cabbage
6-8 mini tri-color sweet peppers, sliced crosswise
1/2 cup chopped jicama
1 avocado, pitted, slice in eighths
1/3 cup cilantro or micro-cilantro
1 medium lime
Salsa Verde Recipe:
12 ounces tomatillos, quartered
1 poblano, charred, skin and seeds removed
1 cup packed cilantro, some stems okay
3 green onions
2 garlic cloves
1/2 teaspoon salt
1/2 serrano pepper, seedless (or 1 whole shishito pepper with stem removed)
12 ounces ground mild pork sausage or ground chicken
4 medium green onions, chopped, separate roots from green tips
2 teaspoons ancho chili powder
2 teaspoons sweet paprika powder
1 teaspoon smoked paprika powder
2 teaspoons ground cumin
1 teaspoon granulated garlic
1 teaspoon ground coriander
Salt to taste dependent on brand of ground pork sausage
4 ounces mild diced green chiles
1 tablespoon ketchup
1 tablespoon fresh lime juice or more
To Make Salsa Verde:
Place all salsa verde ingredients into the bowl of a food processor. Pulse until chunky smooth; set aside. Note: When making salsa verde to eat with chips use 1 teaspoon of salt. Salt is reduced in this recipe due to the chorizo and soup base.
To Make Chorizo: In 12-inch Cast Iron Skillet, over medium-high heat, brown pork sausage, whites of onion, ancho chili, both paprikas, cumin, garlic, and coriander; about 5 minutes. Add green chili and ketchup; cook on low for 2-4 minutes. Add lime juice and salt to taste; set aside.
To make Salsa Verde Chorizo Udon Noodle Soup:
Remove udon noodles from packaging, and set aside. In a large soup pot, combine seasoning packet to 4 cups of water; bring to a boil. Add the carrots and blanch for 2 minutes; remove with a slotted spoon or spider; set aside. Add snap peas and blanch for 30-60 seconds; remove; set aside. Adjust heat to low, and simmer Udon noodles for 2 minutes. Add 1 cup fresh salsa verde and simmer 1 minutes. Turn heat off. Taste broth and add 1/2 to 1 tablespoon of lime juice, or to desired taste dependent on tartness of tomatillos.
Mix cabbage with 2 tablespoons salsa verde; set aside.
To assemble: Divide Udon Noodles and salsa verde soup broth into 4 bowls. Divide carrots, snap peas, mini peppers, avocado slices, and jicama around the inside edges of the 4 bowls. Top the the center of each bowl of soup with 1/4 cup to 1/3 cup chorizo (or desired amount), and sprinkle with cilantro. Dollop a tablespoon of salsa verde over the entire bowl of noodle soup, and serve immediately! Serve with additional bowls of salsa verde and chorizo for guests can help themselves.
