Party-Thyme & Sage Cashew Crumb Aussie Lamb Chop
Party Thyme & Sage Cashew Crumb Aussie Lamb Chops
Ingredients:
2 packages Aussie Rack of Lamb
1 tablespoon ground black pepper, divided
3 teaspoons sea salt, divided
3/4 cup plus 2 tablespoons cup olive oil or canola oil, as instructed
1/2 cup loosely packed thyme leaves and stems
1/2 cup loosely packed sage leaves and stems
1/4 cup loosely packed parsley leaves no stems
6 garlic cloves
1 cup salted roasted cashews
1 cup freshly grated parmesan cheese
3/4 cup olive or canola oil
1 cup Panko crumbs
Directions:
Heat oven to 375°. Line a baking pan with foil.
One hour before serving, remove Aussie Rack of Lamb from refrigerator, and trim of excess fat. Season lamb with 1/2 tablespoon pepper and 2 teaspoons salt; set aside.
Pour 2 tablespoons oil into a large skillet. Heat thel skillet, on medium high, just until smoke appears. Lower 1 rack of lamb into hot oil with tongs, and brown all edges, 2 minutes per side. Transfer to prepared pan. Repeat browning steps with second rack of lamb.
In a food processor, combine thyme, sage, parsley, garlic, cashews, and Parmesan cheese; process until well minced. Slowly pour in oil and process until well mixed. Remove crumb mix and stir in Panko crumbs.
Divide the crumb mixture in two, and pat about 1 1/2 cups coating on each rack of lamb. Tip: Wet your fingers before patting the crumb coat.
Place lamb, bone-side-down, on a foil lined baking sheet. Place in the center of the oven and bake for 25 minutes or until (130°F) or desired doneness. Transfer to a cutting board. Allow lamb to rest 10 minutes before slicing into single chops.
Serving suggest: Lemon Thyme Pears or Cranberry Sauce
Servings: 8 (2 lamb chops) or 16 single lamb chop servings

Lemon Thyme Pears Recipe
To make Lemon Thyme Pears: In a large saucepan, heat 6 chopped peeled pears, 1/2 cup maple syrup, a handful of thyme, and 1 tablespoon fresh lemon juice with zest. Bring to a boil and simmer until slightly soft, about 8 minutes. Remove thyme stems. Chill or serve room temperate. Garnish with fresh thyme.
******************* I would rave more about the juiciness of this Aussie Rack of Lamb dish...but I think the photos speak enough. When you sear Aussie lamb chop then pat on a crumb coat the juices are retained in the lamb and trapped in the crumb coat. Truly, the most risk free way to cook lamb. Plus, if you need to sear the lamb one day and finish off in the oven the next day...great for serving mass company employees! LoL
I actually seared 3 racks a few hours before our guests were arriving and popped the pan into the oven for 25 minutes about 45 minutes before the party appetizers were gouging to be served.
