Salsa Verde Aussie Grassfed Ground Beef Filling

Gather your friends, huddle around the television, it’s time for some tasty Super Bowl snacks. Can you hear the cheers already? I am never sure if the cheers are for the Super Bowl food or the game!

Are you a game lover or a snack lover? I bet you can guess what I am! I love Super Bowl Sunday because no matter if your team wins or loses you can prepare winning snacks! This year, I thought I'd provide one filling, Salsa Verde Aussie Grassfed Ground Beef Filling, and then you can decide what snack to make. You see, I have a master sauce that I am known for, A Merry Recipe Salsa Verde. The salsa is all fresh except for a charred poblano pepper. The salsa isn't too spicy and the tomatillos give perfect acid. Please report back to me and let me know what appetizer you chose to make!

The filling can be used for: egg rolls, burritos, chimichangas, filled pasta shells. Empanadas, scrambled eggs, potato skin topping, tacos, dip with tortilla chips, nachos, pizza topping, to name a few!!!

A MERRY RECIPE SALSA VERDE

Ingredients:

12 ounces tomatillos, peeled (about 3 cups)

1 cup cilantro, stems okay

3 garlic cloves

3 green onions

1 jalapeños or 1/2 Serrano if you like it hot

1 poblano pepper, charred, scrape skin, remove stems and seeds

1 teaspoon salt

Instructions:

Place all ingredients into a food processor and blend until salsa consistency. Occasionally, the salsa needs a little lime juice or agave syrup.

SALSA VERDE AUSSIE GRASSFED GROUND BEEF FILLING

Ingredients:

1 tablespoon canola oil

1/2 medium onion, chopped

1/2 cup poblano pepper, chopped

1 pound Aussie Grassfed Ground Beef

1 teaspoon sea salt

1 teaspoon ground cumin, if desired, add more

1/2 to 1 cup A Merry Recipe Salsa Verde

4 ounces pepper jack or Monterey Jack Cheese, shredded

Instructions:

Over medium heat, combine canola oil, onion, and poblano pepper. Sauce until onion is translucent, about 5 minutes. Adjust heat to medium-high and add ground beef, salt, and cumin. Break up the meat with a spatula, and cook until beef has browned.

Add desired amount of Salsa Verde dependent on fattiness of ground meat. Aussie Grassfed Beef is super lean so I add 1 cup of salsa verde. Stir in cheese and turn off heat. Salsa Verde Aussie Grassfed Ground Beef Filling is ready to use in any of the following recipes!
