Aussie Grassfed Steak Salad and Roasted Corn Salad

SUMMERTIME is for grilling Aussie Grassfed Steaks and getting #BackToPool PARTIES on the calendar!

A few weeks ago, I spent 4 glorious days, teaching my granddaughters swimming at a friend’s home. We had the home to ourselves, as my friend was off on a summer adventure. She was kind enough to let my daughter, her hubby, and 3 granddaughters invade her space. That space included an outdoor grill and perfectly warm pool! Yahoo! I taught swimming for 25 years so swimming to me is as comfortable as cooking is in any kitchen.

When it was grill-time, a lean and light dish, that could be easily assembled, popped into my mind. Ya know, making more time for the grandkids is of highest priority! So wherever your summer adventure takes you this summer I hope the grill and a pool are within reach.

I know my recipe for Grilled Aussie Grassfed Beef Steak Roasted Corn Salad will be loved by all of your summer guests; my 3 granddaughters gave it a thumbs up! They loved the roasted street corn salad on top of my not-spicy grilled steaks.

Grilled Aussie Grassfed Beef Steaks

Grilled Aussie Grassfed Beef Steak and Roasted Corn Salad

Ingredients:

Grilled Smoky Coriander Aussie Grassfed Beef Steaks

3 (10-12 oz steaks Aussie Grassfed Beef Striploin Steaks, trimmed

1 tablespoons vegetable oil

1 tablespoon ground coriander

1/2 tablespoon smoked paprika

1/2 tablespoon sea salt

1/2 tablespoon brown sugar

1 teaspoon ground ginger 1 teaspoon ground cumin

Roasted Corn Salad

5-6 grilled corn-on-the-cob, remove kernels from grilled cobs

2 charred poblano, remove skin, chop 1 pepper, cut into strips 1 pepper

3 charred jalapeño, removed skin, chop 1 pepper, cut into strips 2 peppers

2 green onions, chop

1/2 to 1 cup cup roughly chopped cilantro

1/3 cup mayonnaise

1/4 cup crumbled Cotija cheese

3 tablespoons lime juice

1 teaspoon ground cumin

1/2 teaspoon ground smoked paprika

Salt to taste

6 cups mixed Spring salad greens

1 red bell pepper, chopped

1 pint cherry tomatoes, roasted or fresh

Crumbled Queso Fresco is optional

Method:

Make Salad: Combine roasted corn, 1 charred chopped poblano, 1 charred chopped jalapeño, green onion, and cilantro in a large bowl. Stir in mayonnaise, cotija, lime juice, cumin and smoked paprika. Salt to taste. Cover and refrigerate until ready to serve.

Grill Steaks: Remove steaks from the refrigerator. Brush Aussie Grassfed Steaks on both sides with oil. In a small bowl, combine all spices and salt. Generously season both sides of steaks with rub. Let steaks rest 30 minutes so the rub penetrates. Heat grill to high 15 minutes after steaks have rested.

Place the steaks on the grill and cook until golden brown and slightly charred, 3 to 4 minutes. Turn steaks over and cook an additional 3-4 minutes for medium-rare (an internal temperature of 130-135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F).

Remove steaks and cover loosely, rest in a warm place for 5-7 minutes before slicing.

To serve: In an extra large salad bowl, arrange salad greens. In the center of the salad, arrange sliced beef and roasted corn salad. Arrange tomatoes, additional charred peppers, red bell pepper, and Queso Fresco along the edges of the salad so that guests can select what to add to their steak and corn salad. Serves: 5-6
