Salsa Verde Grassfed Ground Beef Appetizers

Are you ready? Do you have all of your Super Bowl appetizer recipes ready to go? If not, let me help you! Here are a few ideas for easy appetizers made from one filling and one tasty salsa verde! The Super Bowl is late this year but I know many of my friends gather early for brunch and festivities. I'll start you off with a Scrambled Egg Flatbread with Salsa Verde Aussie Grassfed Ground Beef.

The first time I had scrambled eggs with leftover salsa verde ground beef was for breakfast. It was was one of those WOW moments. I happened to have leftover Salsa Verde Grassfed Ground Beef from tacos and tossed it on top of the scrambled egg. To be frank, I had not thought of adding ground beef to scrambled eggs. My daughter and I loved the soft buttery eggs contrasting with the savory earthy Aussie Grassfed Ground Beef. The Salsa Verde added that spicy acid that we all love. We loved it so much, I made it again for dinner! Enjoy!



Ingredients:12 ounces tomatillos, peeled (about 3 cups)

1 cup cilantro, stems okay

3 garlic cloves

3 green onions

1 jalapeños or 1/2 Serrano if you like it hot

1 poblano pepper, charred, scrape skin, remove stems and seeds

1 teaspoon salt

Instructions:Place all ingredients into a food processor and blend until salsa consistency. Occasionally, the salsa needs a little lime juice or agave syrup dependent on the flavor of the tomatillos. I did not use lime nor agave in my recipe this time.



1 tablespoon canola oil

1 cup fresh corn, optional

1/2 medium onion, chopped

1/2 cup poblano pepper, chopped

1 pound Aussie Grassfed Ground Beef

1 teaspoon sea salt

1 teaspoon ground cumin, if desired, add more

1/2 to 1 cup A Merry Recipe Salsa Verde

Scrambled Egg Flatbread with Salsa Verde Aussie Grassfed Ground Beef: Make your favorite scrambled eggs. Toast flatbread or English Muffins under the broiler for a few minutes. Add a slice of pepper jack cheese and broil until bread has toasted. Top toasted bread with scrambled eggs, shredded cheese, Salsa Verde Aussie Grassfed Ground Beef Filling, roasted mini pepper slices, and cilantro.

Salsa Verde Aussie Grassfed Ground Beef Tacos: Fry tortilla shells, and fill with Salsa Verde Aussie Grass-fed Ground Beef Filling, queso fresco, more salsa verde, and cilantro.

Aussie Grassfed Ground Beef Salsa Verde Chili: Add to the filling, 1 can pinto beans, 1/2 can refried beans, 1 1/2 cups chicken stock, 1 teaspoon additional ground cumin, 1 teaspoon ancho chili powder, and 1 teaspoon ground coriander. Heat and adjust seasoning to taste. I always add 1 tablespoon lime juice. Top with green onion, jalapeño slices, crumbled queso fresco, and tortilla chips.
