Dill Saltfish Sandwich Roll

CFE International invited food bloggers to a Saltfish Recipe Challenge! It was a fun challenge to create with sailfish!

I was invited by CFE International to take part in the bloggers Saltfish Recipe Challenge! I was provided frozen BacalaRico Boned Salted Pollock Fillets to make my tasty dish! I love checking out the bloggers creative spin on how to cook with this always-available-easy-to-cook-with saltfish. It was fun thinking of ways that prepared sailfish can be incorporated into classic dishes! I think you will love my take on a lobster roll!

Dill Saltfish Sandwich Roll aka Not That Rich Man’s Lobster Roll

INGREDIENTS:

For Saltfish:

1 (12oz) package BacalaRico Boned Salted Pollock Fillets, prepared

1 cup whole milk

1 tablespoon classic seafood seasoning

For Creamy Dill Sauce:

1 stick celery

1 green onion

1/4 cup loose fresh dill fronds

1 tablespoon fresh parsley

1/2 cup mayonnaise

2 tablespoon spicy or mild cocktail sauce

2 teaspoon fresh lemon juice

1/4 teaspoon sea salt or to taste

1/4 teaspoon classic seafood seasoning

For Buns:

4 tablespoons softened butter

3 or 4 split top hot dog buns

1 head bib or butter lettuce, washed and separated

2 tablespoons chopped sweet red pepper

minced dill fronds and chopped green onions

Seafood seasoning

INSTRUCTIONS:

To “prepare” saltfish: Soak salted fish in 6 cups fresh water for at least 8 hours or overnight, changing the water at least three times.

In a large saucepan, bring milk and 1 cup water over medium-high heat. Add prepared saltfish and seafood seasoning. Adjust heat to maintain a bare simmer. Cook until fish flakes easily, about 10 minutes. Drain fish refrigerate to cool.

To prepare sauce: In a mini food processor or mince by hand celery, green onion, dill, and parsley; transfer to a salad bowl. Add mayonnaise, cocktail sauce, lemon juice, sea salt and seafood seasoning; stir until well mixed. Gently fold chilled sailfish into sauce.

To prepare buns: Spread inside of buns with butter and open carefully on to a hot griddle. Grill until toasted.

To assemble: Arrange 1 or 2 lettuce leaves to cover bun and fill with sailfish filling. Sprinkle with red bell pepper, dill, and seafood seasoning. Serves: 3-4 Enjoy!
