May is Burger Month!!
What kind of burger is your fave? Send me over a char-grilled burger, and I am pretty darn happy! Pork, Beef, Chicken...but hold the veggies and turkey burgers please. Add melted pepper jack cheese and some crunchy stuff like award winning pickles or cucumbers, a tomato for the acid, assorted buns will do, and always a creamy Thousand Island or in the photo above a Fusion Burger Spread. Okay, give me a squirt of mustard! OH WAIT ~ an over 5-ounce burger or more is makes me merry....cuz who wants the calories of a bun and accoutrements without a huge bite of meat???
reality, when I am judging a burger contest, the masterpiece must fit into my mouth so I can taste a combo meat, toppings, and bun. Don't put a 7-inch tall burger in front of me and serve it with a knife....only do that in fun burger photos! Anyway, you get the picture I have my opinions and you have yours when it comes to burgers. One thing we do have in common is that we love to drool and gawk over those burger monstrosities we see on Instagram! BUT in
Onward, I am on a Ground Pork Burger Craze right now. My favorite is when I grind 5 strips of bacon with 2 pounds of ground pork. Today, I changed it up and ground 3.5 ounces of shiitake mushrooms, with charred poblano, garlic, lemongrass, and ginger. As you know, I LoVe to PlaY in the KiTcHeN!
The flavors were good but next time I don't think I would ad the lemongrass...just saying not necessary.
The Fusion Burger Sauce was a little bit of this and that, and Hubby and I both enjoyed it. You can check out the recipe below.

Fusion Pork Burger
For Ground Pork Burger:
3.5 ounces Shiitake Mushrooms
1 tablespoon ground lemongrass, optional
1 inch fresh ginger
3 garlic cloves
1/4 of a whole charred poblano
1/4 cup loosely packed cilantro
1 pound ground pork
1/2 tablespoons soy sauce
1 teaspoon Himalayan salt or kosher salt
1/4 teaspoon red pepper flakes
3 slices pepper jack cheese
Toppings: Packaged Asian slaw mix, cucumbers, cherry tomatoes
Fusion Burger Spread:
1/4 cup mayonnaise
1 tablespoon ketchup
1 tablespoon sweet chili sauce
1 tablespoon minced green onion
1/2 tablespoon lime juice or to taste
1 teaspoon soy sauce
2 teaspoons whole grain mustard, I used Maile's Old Style Mustard
MINCE mushrooms, lemongrass, ginger, cloves poblano, cilantro in a food processor.
COMBINE minced mushroom mixture with pork, soy sauce, salt, and red pepper flakes.
FORM into 3 pork patties, about 5.30 oz per patty.
GREASE a skillet or grill pan or outside grill grates to medium high. Cook burger on each side, about 4 minutes or until desired doneness. Remove from heat source.
TOAST BUNS with pepper jack cheese on one side. (I did this under the broiler.)
STIR all Fusion Burger Spread ingredients.
SMEAR Fusion Burger Spread on bottom bun. STACK with slaw, cucumbers burger, and cherry tomatoes. Drizzle more Fusion Spread over tomatoes and invert melted cheese bun on top of burger and tomatoes. #OHYUM!
