Summer Parties with Aussie Grassfed Beef

Summer Time! Do you have lots of graduation parties, bridal showers, family and friend gatherings, and pool parties planned? I do! And I always am saying YES when asked to cook!

Last weekend, I hosted a graduation party for 35 guests…I truly mean guests because I only knew the graduate! I was the only one in the kitchen so I had to design a menu that could be made a day or two ahead! My stuffed Aussie Grassfed Beef Buns were perfect!

Aussie Grassfed Ground Beef and Mushroom Stuffed Buns are super easy and the filling can be made a day or two ahead! YaY! I kept the ingredients fresh and healthy just like lean Aussie Grassfed Ground Beef! The nutrition in Aussie Grassfed Beef has always been a selling point to me so I continued with that thinking and tucked in lots of nutritious mushrooms, cilantro, and tomatillos!

If you are in a hurry you could use refrigerated prepared green salsa but I happened enjoy making everything from scratch. Anyway, I know you will enjoy this simple Aussie Grassfed Ground Beef Stuffed

AUSSIE GRASSFED GROUND BEEF AND MUSHROOM STUFFED BUNS

Ingredients:

2 cups chopped baby Bella mushrooms

1 pound Aussie Grassfed Ground Beef

1 teaspoon ground coriander

1 teaspoon ground smoked paprika

1/2 teaspoon ground cumin 3/4 teaspoon fine sea salt, or to taste

4 garlic cloves, chopped

1 poblano pepper, chopped

3 green onions, chopped, divided

1 jalapeño, chopped

6 tomatillos, chopped

1 cup cilantro, chopped, divided

1 cup grated Mexican cheese blend

1/4 cup Queso Fresco, crumbled

12 mini Kaiser rolls, cut a 2-inch hole and hollow out

Method: In a large non-stick skillet, over medium heat, sauté mushrooms 5 minutes. Add ground beef, coriander, paprika, cumin, salt, and garlic; cook and stir frequently until beef is no longer pink. Transfer seasoned beef and mushrooms to a bowl.

Using the same skillet, over high heat, combine poblano, half of the onions, jalapeño, tomatillos; cook and stir occasionally until slightly charred. Turn to low heat and add half of the cilantro; cover and cook 5- 8 minutes to soften. Remove from heat and stir in seasoned ground beef, Mexican cheese, and remaining green onions and cilantro. Cover, and refrigerate filling until ready to prepare stuffed buns. Or stuff 1/3 cup meat filling into prepared buns and place on a rimmed baking sheet. Cover buns loosely with aluminum foil and bake at 375°F for 10 minutes. Uncover stuffed buns and bake 5-8 more minutes until filling is hot and bread is crisp.

Sprinkle with queso fresco and cilantro. Serve warm.
