I LOVE cooking challenges! As a home cook, playing with new products sparks creative culinary brainstorming resulting in delicious well-thought out dishes! After saying YES to the Simply Sesame Blogger Recipe Challenge, I received 3 jars of Simply Sesame butters from Bonelli Fine Food out of San Diego, California. My BraiN began SparKing! Just thinking of the 3 Simply Sesame flavors makes my mouth water!

SO I chose a recipe that is ToTallY healthy, gluten-free, and natural and promotes a HealthY LifeStyle! Pistachio Cardamom White Bean Hummus turned out with creamy with hints of sesame. The dip keeps for several days ~ a great make ahead party dish. AND it is SIMPLY super easy, just toss all ingredients in the blender or food processor! Pistachio Cardamom Sesame Spread & White Bean Hummus
1/3 cup Simply Sesame Pistachio Morsels & a hint of Cardamom spread
1 can (15 oz) organic Cannellini beans, rinse and drain
2 tablespoons chopped chives
2 tablespoons fresh lemon juice
1 teaspoon finely grated ginger
1/8 teaspoon ground black pepper
1/2 teaspoon sea salt
pinch ground red pepper
1/3 cup plus 1 tablespoon healthy oil of choice (I used canola oil)
Optional: 1 tablespoon refrigerated coconut milk to thin or just use oil
3 tablespoons chopped roasted and salted pistachios
Fresh mini and cut vegetables
In the bowl of a food processor, combine Simply Sesame spread, beans, chives, lemon juice, ginger, black pepper, sea salt, and red pepper. Turn the processor on to roughly chop beans then slowly pour in oil until creamy and thick. Add coconut milk, if desired to thin, or extra oil. Taste; add lemon or extra black or red pepper, if desired.
Garnish with fresh chopped chives and chopped pistachios. Serve with mini carrots, snap peas, celery sticks, and mini-peppers or vegetables of choice.
