I like to think I can make everything from scratch but hey I need a little cheat-list …especially when company drops by unexpected! Plus, I want to enjoy my PEOPLE and not be in kitchen 24/7!

Merry tips for a stress free hostess holiday:

  1. Find the most flavorful prepared foods! Costco’s refrigerated pesto is delicious! Costco’s tapenade is equally scrumptious and easy to flavor boost many appetizers. Both prepared foods have a long shelf life in your refrigerator.

  2. Choose fresh produce that are bright and festive in color and can be store in the refrigerator for a 1-2 weeks: cherry tomatoes, snap peas, carrots

  3. Stock up on some #aussome, quick cooking, Aussie ground lamb, rack of lamb, and sirloin lamb chops. Those 3 cuts of Aussie lamb can be prepared in under 20-30 minutes!

  4. Gather your Aussie Lamb recipes, place in a plastic sheet protector, fasten on a clipboard board, and place on top of the fridge! Okay, place wherever so it won’t get lost!

Now let me give my rave review for Tapenade Aussie Lamb Pesto Flatbread with Fennel,Tomatoes and Mozzarella!!! I surprised myself with just how easy and tasty a party bite could be! How I discovered the this flatbread combo is at Thanksgiving my daughter and son made pesto, olive tapenade, and mozzarella flatbread squares. My son tossed the flatbread on the grill after cooking our turkey. The flatbread was almost too charred but when our 25 dinner guests began to take bites their oooooh and ahhhhh filled the room. I am not exaggerating! Guests came to me and raved about the flatbread….I had not made ~ but could take mama pride in.

So when Aussie Grassfed Beef and Lamb asked me to develop a holiday appetizer I new exactly where to begin! I had a genius moment …a mixed the senior moments and decided to stir the olive tapenade into the Aussie Ground Lamb. Score! Olives and Lamb go so well together. Hmmmm maybe I need to make an Aussie Lamb Tapenade Slider! Tapenade Aussie Lamb Pesto Flatbread

with Fennel, Tomatoes and Mozzarella

Ingredients:

1/4 cup extra version olive oil, as instructed

1 cup chopped red onion

1 cup chopped fennel bulb, reserve the fronds for garnish

1 1/4 teaspoon salt, divided

1/2 teaspoon freshly ground black pepper

1 pound Aussie Ground Lamb

3 large garlic cloves, finely grated

1/4 cup prepared olive tapenade, serve additional with completed dish

3/4 cup prepared pesto, divided

3 (12” x 6”) prepared flatbread

8 ounces fresh mozzarella

1 cup cherry or grape tomatoes, cut in halves

Drizzle: extra version olive oil and aged balsamic vinegar

Directions

Preheat oven to 425°F.

In a large frying pan, over medium heat, heat 2 tablespoons olive oil. Add onion, fennel, and 1/4 teaspoon salt, stir frequently, and cook for 5-8 minutes.

Adjust heat to medium high, add lamb, garlic, and 1 teaspoon salt, stir and break up lumps with a spatula. Add 1/4 cup tapenade, and cook lamb until it is lightly brown. The lamb will finish cooking in the oven. Transfer cooked lamb to a strainer to drain fat. Set aside lamb and, and discard fat.

Brush olive oil on the bottom side of each flatbread, and place on large rimmed baking sheets. Bake on bottom rack of oven for 5 minutes, to crisp bottom crust.

Remove flatbreads from oven. On each flatbread, spread 2-3 tablespoons of pesto, leaving 1/2-inches around the edges. Layer flatbread with lamb, cheese, and tomatoes. Bake for 8-10 minutes or until cheese has melted.Garnish with fennel fronds, cut slices with a pizza wheel, and immediately serve.

*To reheat leftover flatbread: place slices on sheet pan and broil on high for 3-4 minutes, 6-inches below heating element.
