Lemongrass Ginger Wild Blueberry Smoothie Bowl

Lemongrass, ginger, and basil infuse this Wild Blueberry smoothie bowl with a Vietnamese flavor twist! Vibrant! Wild in Flavor! Smoothie Fun for Everyone!

I love keeping up on food trends! Smoothie Bowls have been trending for a few years and it is of no surprise! Smoothie bowls are eye-catching with vibrant colors and intriguing toppings. I think an artistically designed smoothie bowl is a beautiful masterpiece. 

 

I had my first smoothie bowl in 2015, at a small café, in Pismo Beach. I don’t really remember every nutritious ingredient that it was made of but I do remember the experience. I loved experiencing the creamy blend of flavors with the crunchiness of unique toppings.

 

As you have heard we eat with our eyes and for me a gorgeous smoothie bowl is so much more satisfying and nutritious than a taupe bowl of soggy cereal! Smoothie bowls are not only great to for breakfast but as a post-workout meal, a meal replacement or even a dessert.

 

Here is a merry smoothie bowl serving idea! Host a farm to table brunch or dinner and serve a small superfoods smoothie bowl as the first course or as the dessert! Top your wild blueberry bowl with contrasting colors like bright yellow and pink edible flowers, cucumber slices, or toasted almonds! Now that will make a lasting impression!

 

So I admit, this is my first smoothie bowl. I make smoothies all of the time but for some reason I thought I was not artistic enough to make a smoothie bowl. Let me tell you, if I can do it you can do it too! It only took 3 extra minutes to grab some toppings and arrange them on top. And then….when I began to take each bite I was in Smoothie Bowl Nirvana and kicked myself for not making my first smoothie bowl after returning from Pismo Beach. I really do love the variation of texture variation and the flavor pops…and of course the nutrition!

 

As you have heard me say before Wild Blueberries are power packed nutrition gems! My grandkids love eating frozen Wild Blueberries and I love serving them too!  

 

 

INGREDIENTS I CHOSE and some MERRY SUBSTITUTION TIPS! 

 

 Merry Tip #1:

When avocados are not in season or affordable omit the avocado and use 1 whole banana.

Right now avocados are 4 for $1.00 in California! 

 

 Merry Tip #2: 

I love the caramel flavor of organic coconut sugar, and I feel it is a healthier substitution for many other sweeteners. Many of my local stores carry it in their baking section or the health food section. Many stores feature Bob's Red Mill products all in one place. If coconut sugar is not available use 1/2 tablespoon agave syrup, pure maple syrup or honey. I love to using a touch of coconut sugar on top of my smoothie bowl you could use a touch of Turbinado sugar or date sugar. 

Merry Tip #3: 

Finely grating lemongrass, lemon peel, and ginger on a Rasp Grater is a must and so easy! 

 

 Merry Tip #4:

Don't be afraid of edible flowers they are a culinary fashion statement! Sprouts market sells a small package for 99 cents! Super cheap! They really don't have much flavor...or at least I did not taste it! 

 

LET'S GET BLENDING!

  

Lemongrass Ginger Wild Blueberry Bowl

serving: 1 large or 2 small

 

Ingredients

For Smoothie:

1 cup frozen Wild Blueberries

1 cup refrigerated unsweetened coconut milk beverage

1 teaspoon lime zest

3 tablespoons fresh lime juice

1 tablespoon finely grated lemongrass

1/2 tablespoon finely grated ginger

1 tablespoon coconut sugar or ½ tablespoon agave syrup

1/2 tablespoon chia seeds

1/2 small avocado

1/2 medium banana

1 cup ice 

 

Optional Toppings:

Frozen Wild Blueberries

Edible flowers

Toasted almond slices

Coconut sugar

Small basil leaves (about 8 small leaves)

Lime slice

 

Preparation

1. Combine all Smoothie ingredients in a high power blender.

2. Blend until smooth.

3. Pour smoothie in bowl and artistically arrange with toppings of choice!
